single instance of VDP appliance is capable of protecting up 100 VMs (recommended limit). But i did noticed few deployments sharing the load with 2 appliances as well

VDP supports up to 100 VMs per appliance. However if this is a Ent or Production environment that you want to backup, I'd advise you to stay away from this product and look at 3rd party alternatives.
